As the days grow colder and nighttime comes earlier, it's natural for us to want to cook hot, stick-to-your-ribs dinners for our families. But on today's time schedules, it'd better be EASY. Who has time for anything else? Not me! Not you!  

Well, here is an easy chicken recipe that can be made in less than 30 minutes. It's mild, creamy and soothing on a cold winter's day. Add some Pillsbury Biscuits with butter and jam, and your family will be asking for seconds!

Butter 1/2 cup 
(or use margarine or chicken fat)
1/2 cup flour
1/2 tsp salt
1 1/2 cup chicken broth
1 cup whole milk
4 cups diced, cooked chicken
1 small can mushrooms,drained (or 1c. raw sliced mushrooms)
1/4 cup chopped canned pimiento *optional

In a saucepan, melt butter.  Whisk in flour and salt. Gradually add chicken broth and milk. Cook, stirring constantly, till sauce is thick and bubbly. (This can be done in a larger, microwavable bowl in the microwave if you prefer. I do!)

Cut and cook the chicken in a large skillet.  When it is nearly done, add the mushrooms and thickened sauce. Simmer till the chicken is completely done.
Serve on toast points, freshly baked biscuits or mashed potatoes.
