Turkey Leftovers -- Make 'em Sizzle!

By Sinea Pies

Well, here we are...the day after enjoying the Thanksgiving bounty--now, what do you do with all that leftover turkey?

In our household, you'd better stash some away for sandwiches and other post-holiday delicacies or it will all go into my husband's favorite dish: Pan Fried Leftovers!
When you make it, you'll see that it doesn't look pretty but it sure does taste good.
Here are the directions:

Pan Fried Leftovers
  1. Heat a non-stick skillet on medium.
  2. Add a little butter and melt it.
  3. Add the bite-sized turkey pieces that you scavenge off the bones (or cut some larger pieces) to the pan and let it sizzle.
  4. Add stuffing. Lots of it. In our family, it is Matzo Stuffing. Now, use your plastic spatula to toss it like you would scrambled eggs.  Let some parts get a bit crisp from the frying.
  5. Add some gravy and toss again.
  6. Serve hot on a plate with leftover cranberry sauce on the side.
