Chicken Parmesan

Like Italian food? We LOVE Italian food but often wait till we can go to Olive Garden, Frattelli's or Rosey's Cafe. These Italian restaurants have GREAT food. 


Love Olive Garden's salad? Now you can serve it at home!


Taking the whole family out to enjoy Italian cuisine is fun but when the budget is tight, what can you do? Make it at home! This Chicken Parmesan Recipe is easy to make, even for a large family, and it tastes great!

Easy Chicken Parmesan Recipe

Chicken Parmesan 

Ingredients
2-3 pounds boneless chicken breast
3 eggs, beaten
olive oil
3/4 cups bread crumbs, unseasoned
3/4 cups grated Parmesan Cheese
---
1 small can tomato paste
water
dash or two of garlic powder
sprinkle of dried basil
---
1 cup shredded mozzarella cheese


Dip the chicken breasts in egg and breadcrumb mixture.

Directions
Preheat Oven to 350 degrees.


Heat a non-stick skillet with 3 T. oil. (You can add more oil during this process when it runs dry.) Get out 2 plates. Beat the eggs in one. Add breadcrumbs mixed with Parmesan Cheese in the other. 

Dip the boneless chicken breasts in egg, then crumb mixture and fry in skillet till both sides are brown and slightly crisp, placing each piece on a foil-covered baking sheet afterward.

Blend tomato paste with some water in a dish, creating a sauce. Make it "spreadable" not "pourable". Season to taste with garlic powder, basil and salt. 

Warm the tomato paste sauce in the microwave for 30 seconds to 1 minute.


Place breaded / fried chicken on baking sheet.

Spoon the tomato sauce on top of each piece.
Sprinkle mozzarella cheese on each.

Top with shredded mozzarella and melt in the oven.


Serve with sides such as tossed salad, spaghetti with sauce (Prego Traditional tastes great), bread and butter...whatever you fancy!
