This is one of those recipes that was such a welcome discovery. I had been low-carb dieting very successfully for a while, but I was getting bored.
Eggs and bacon for breakfast.
Salad for lunch.
Meat and veggies for dinner.
Atkins bars and/or shakes in between.
¼ cup milk or half & half
¼ cup shredded cheddar cheese
¼ tsp salt
¼ tsp pepper
½ cup fresh asparagus cut into pieces
Preheat oven to 375
Spray glass pie plate with non-stick spray.
Combine eggs, milk, cheese, salt & pepper in a mixing bowl.
Beat with a fork.
Mix in asparagus pieces.
Pour into pie plate.
Bake 20 minutes.
Remove from oven and cool 5 minutes.
Cut into quarters and serve.
