Velvety Chocolate Cupcakes
Instructions for making this as a layer cake: CHOCOLATE LAYER CAKE
1 box chocolate cake mix
1 box [4 oz.] instant chocolate pudding mix
1 cup sour cream
1/2 cup water
1/2 cup canola oil
Garnish: chopped nuts, chocolate chips or sprinkles
Put cupcake liners in each depression on 2 cupcake tins (24 cupcakes)
Variation: use brewed coffee (cold) instead of water
Combine all ingredients: cake mix, pudding mix, sour cream, water, oil and eggs in a large mixing bowl.
Mix for about 1 minute.
Spoon batter into each cupcake tin - it will be thick.
Bake for 18-22 minutes.
I used chocolate buttercream frosting and garnished them with walnuts, chocolate chips or colored sprinkles.
