Grilled Scallops with Bacon

Love scallops? Me, too! Scallops cooked on the grill with bacon are especially tasty... but wrapping each scallop takes lots of time and bacon. Get the same great flavor with this little cooking tip.  Place pieces of raw bacon on top of the scallops and close them in a kabob grilling basket, which will keep the bacon pieces in place.

Prepare the grilling baskets by generously coating them with oil or spraying with cooking spray.
Rinse the scallops and place them inside the basket leaving a bit of space in between.
Cut 1-inch pieces of raw bacon and place one on top of each scallop.
Close the baskets and put them on the hot grill.
Turn the baskets every couple of minutes,  laying them on each of four sides of the baskets.
Depending on the heat of your grill, they should be ready in 10-12 minutes.

Remove the baskets from the grill, open and remove the scallops and bacon.
Serve with rice and veggies.
Serves 2-4 people
